Sam amp; Molly met in 2007 at a business networking group. Molly had a marketing business and Sam was a builder. (Sam thought Molly was obnoxious and Molly thought Sam was a grumpy stick-in-the-mud lol.) They fell in love anyway and married in 2009 and started their life together. Everything was great except Molly was having a hard time with meals. They were making her sick. Not every meal but most of them. Every new diet was tried even some questionable ones desperately seeking a solution. Years of frustration and trying to find the food triggers wore on. At one point Molly was down to about 15 foods she could safely tolerate and still no closer to figuring out what exactly was making her sick.
A yellow jacket sting would be the key to unlock the mystery. It was histamine intolerance! What the heck is that? Well its complicated. But after a little research (hours upon hours lol) Molly finally knew what to avoid and how to eat. Although it still wasnt simple. Everything had to be completely clean and fresh. Molly eats an organic soy-free low histamine vegetarian diet. Sam bless him does too. (The man is a saint!)
You might not know this about Sam but hes a farmer right down to the ground. Hes a great builder but his true LOVE is growing things. Some of Mollys research pointed to a genetic disorder that meant she wasnt producing enough of diamine oxidase (DAO) which is a histamine-lowering enzyme in your digestive tract. One of the highest natural sources of DAO was pea microgreens so Sam decided to try to grow them. This way he could control every aspect of the growing process to ensure the cleanest freshest nutrient-packed product and it could be grown inside in winter in Minnesota. Wow let me tell you they were absolutely delicious! It also meant that by adding them to foods it would lower the histamine in the dish allowing much more variety to their diet. Molly did a little more research and found that most microgreens contain 4-40 times the nutrition as their mature counterparts so they started experimenting with other varieties.
Many great salads and delicious meals later they thought ’This is great! We should share this other people would love this too!’ And…Tiny Seeds Garden was born ?
